Keto Stuffed Bell Peppers

Serves : 4

Prep time : 45 minutes

Ingredients :

4 bell peppers, any color of your choice

1 lb of ground turkey or ground beef

1 diced onion

1 dice zucchini

6-10 cherry tomatoes diced

Red pepper flakes for a little spice (optional)

1 cup of cauliflower rice

1 cup of shredded cheese

Steps:

Preheat oven to 350 degrees F.

Cut the top off peppers, remove stems. You can finely chop the tops if you prefer or discard.

Scoop the seeds out of the pepper.

Place peppers(right side up) in a baking dish, just large enough to hold them.

Heat 2 tbsp of olive oil in a large skillet at medium high heat.

Add your protein(beef/ turkey).

Season with salt, pepper, garlic powder, onion powder.

Cook for 8-10 minutes until the meat begins to brown.

Remove to a paper towel-lined plate to get rid of the fat.

Next add the onions and chopped peppers and cook for 3-4 minutes.

Next add the zucchini and cook for another minute.

Next add the tomatoes and season with salt and a pinch of red pepper flakes, next stir back in the beef and rice.

Finally fill the peppers with mixture and top each with cheese.

Pour a small amount of water in the bottom of the baking dish and cover with foil.

Cook for 35-45 minutes until the peppers are soft and the cheese is melted.
