This is a quick and easy recipe I threw together from some leftover protein
that I cooked earlier in the week.
Serves : 4
Prep time : 15 minutes
Ingredients :
2 lbs of chicken( I cut this from a whole chicken, and I used mostly the dark meat)
1 lb of roasted beef
1/2 cup diced onions
1 8oz package of baby bella mushrooms
2 cups of heavy whipping cream
3 cups of baby spinanch
1 cup of celery
1/2 cup of mozzarella cheese
1/2 cup of cheddar cheese
Steps:
In a large pot and 3 cups of water or chicken stocks
Add in the onions, celery and protein(chicken and roasted beef).
Set to medium heat and add in the remainder of ingredients minus the
spinach.
Stir as the liquid starts to thicken begin to add in the spinach, and reduce to
low heat and cover.
Let cook for 25 minutes while adding in the remaining spinach.
Once the spinach has wilted completely you are ready to serve.
